Wholesome Chickpea Salad Bowl with Sweet Potato & Hummus
Ingredients:
For the Salad:
- 1 bunch parsley, finely chopped
- 1 handful spinach (whole leaves, washed)
- 2 tbsp Greek yogurt
- Juice of 1 lemon
- Salt & black pepper (to taste)
- ¼ cup sun-dried tomatoes, chopped
- ½ bowl (about ½ cup) cooked chickpeas
- 1 medium tomato, chopped
- 1 small cucumber, chopped
- 1 tbsp olive oil
For the Sweet Potato Side:
- 1 medium sweet potato, boiled
- ½ tbsp ghee
- 1 tbsp roasted sunflower seeds
- 1 tbsp roasted pumpkin seeds
